It's fully trimmed and ready to go straight into the oven, or you can give it a very quick sear if you like your meat super rare. Not an especially common joint, lamb saddle fillet includes the exceptionally tender loin meat you may otherwise recognize as the meat from really good lamb chops. The texture is soft, with a little bit of bite and the flavour is rich.
